Ingredients

Spinach
- 8 cups Spinach, chopped packed
- 1 clove Garlic
- 1 inch Ginger
- 20 Cashews, soaked
Gravy
- 1 Onion, medium
- 2 clove Garlic
- 1 green chili
- 2 Tomatoes, medium size
- 1.5 tsp cumin powder
- 1 Bay leaf
- 0.25 tsp Turmeric
- 0.5 tsp Paprika
- 0.5 c water, as needed
- 0.5 tsp garam masala
- 0.25 c cashew cream
- Salt, to taste
Tofu
- 1 tbsp Nutritional yeast
- 0.25 tsp garam masala
Cashew Cream
- 0.5 c raw cashews
- 1 c water

Directions

Prepare the Tofu
1. Toss tofu with nutritional yeast and garam masala.
2. Bake at 400 for 20 minutes, flipping halfway through cooking.
Prepare the Spinach
1. Blanch spinach by adding it to boiling water and removing it as soon as the leaves are wilted.
2. Immediately transfer to ice water.
3. Drain and set aside.
4. Add spinach to the blender with soaked cashews, 1 clove of garlic, and ginger, and blend until smooth.
Prepare Gravy
1. To a pan add ¼ cup of water.
2. Heat to medium-high heat.
3. Add onions and green chili and other garlic cloves (minced).
4. Allow to cook until softened (3-5 minutes).
5. Add water as necessary to prevent sticking.
6. Add diced tomatoes and cook for 3-5 minutes.
7. Add turmeric, paprika, bay leaf, and cumin powder.
8. Continue to cook for 5-7 minutes, or until tomatoes have broken down and the mixture is thickened.
Finishing the Dish
1. Add pureed spinach and garam masala.
2. Mix to combine.
3. Add tofu.
4. Add cashew cream.
5. Enjoy!
