Ingredients

For the cassava chorizo
- 1 cassava, or yuca, cut in 4 long pieces
- 4 cup Water
- 0.5 cup Red wine
- 0.5 cup apple juice
- 3 clove Garlic, chopped
- 0.5 Tbs Fresh black pepper
- 2 Tbs Paprika
- pinch Salt
For the choripan
- 1 Baguette, cut in 4 pieces
- 0.25 cup chimichurri

Directions

For the cassava chorizo
1. Place the yuca pieces in a pot filled with water and boil for 15 minutes. In a bowl, mix the wine, apple juice, garlic, pepper, paprika and salt and incorporate. Completely coat the yuca with the mix and let it sit and marinate while the oven heats up.
2. Preheat the oven to 200ºC/400ºF.
3. Place the yuca on a baking tray and roast in the oven for 30 minutes. Glaze with the marinade twice while baking. Keep warm.
For the choripan
1. Cut the baguette lengthwise and toast. Place on each piece one cassava chorizo and baste with chimichurri.
