- 1 puff pastry sheet
- 1 Egg
- 3 tbsp Granulated sugar
- Cheddar cheese, shredded or block
- 4 tbsp ube halaya

1. Preheat oven to 400°F/204°C and line one baking tray with parchment paper.
2. Add 3 tbsp granulated sugar to small bowl. Beat 1 egg in another small bowl with hand whisk or fork to make the egg wash.
3. Using your rolling pin, gently roll out 1 puff pastry sheet on work surface to minimize any cracks.
4. Use knife to cut sheet into 8 equal rectangles. Or, use heart cookie cutter to cut out 8 hearts. Place 4 on baking sheet, about 3-4 inches apart.
5. On each cut out piece on the baking tray, spread 1 tbsp ube halaya, about ¼-inch from the border. Add cheddar cheese in the middle. Make sure not to overfill so it is easy to seal.
6. Egg wash the sides of the pastry, then top with another cut out pastry. Seal edges with fingers, then use a fork to crimp the edges.
7. Egg wash the top of the pastry and sprinkle granulated sugar on top. Use a knife to gently score the top. This allows steam to escape while baking.
8. Bake for 12-15 minutes or until puff pastry is golden. Let cool on pan for about 5 minutes, then transfer to wire rack to cool until ready to eat!
