- 2 Tbs Olive oil
- 2 clove Garlic, thinly sliced
- 2 twig Thyme
- 1 ciabatta, day old and cubed
- 0.25 cup Red onion, sliced
- 2 Tomatoes, in eighths
- 0.5 cup colored cherry tomatoes
- 0.5 cup Dried peas, cooked
- 1 Tbs Olive oil
- 1 Tbs Balsamic vinegar
- 0.25 cup Basil leaves
- 0.25 cup parmesan cheese sheets

1. Heat the olive oil in a pan and add the garlic and thyme. Add the bread cubes and cook until they toast. In a bowl, mix the toasted bread, onion, tomatoes and dried peas.
2. Transfer to a plate, spray with olive oil and vinegar and garnish with parmesan cheese and basil leaves.
3. Share and enjoy.
