- 0.333 c sake
- 0.5 c Soy sauce
- 0.333 c Mirin
- 0.333 c Sugar
- 1 lb tuna steaks
- 2 Shallots, sliced into thin rings
- 0.5 c edamame
- 1 English cucumber, sliced thin
- 0.25 c Rice vinegar
- 0.5 c Mayonnaise
- 0.333 c Sriracha
- Mixed sesame seeds, for garnish
- 2 tbsp togarashi
- 1 c sushi rice

1. In a sauce pan, reduce sake until alcohol smell dissipates. Add in soy sauce, mirin, sugar, and optional yuzu hot sauce. Simmer until sugar is dissolved. Drop a few ice cubes in
2. When marinade is down to room temp, pour over tuna cubes and add in the togarashi. Let marinade for 30 minutes to an hour
3. Cook rice according to package instructions. top with a sprinkle of salt, sugar, rice vinegar, and sesame oil and mix
4. Prepare some fried shallots. See my ahi tuna salad video for instructions
5. mix mayo, sriracha, and a tbsp of mirin for the spicy mayo
6. combine cucumbers, mirin, and rice vinegar with some optional gochugaru flakes and let marinate for 15 minutes
7. Add everything to a bowl and make it look pretty for yourself and enjoy!
