- 1 lb Ground pork
- 3 cloves Garlic
- 0.5 Onion
- 1 Tomato
- 1 Potato
- 1 c water
- 4 eggplants
- 3 Eggs
- Salt

Directions

Preparation of Ingredients
1. Mince garlic.
2. Dice onion, tomato, and potato.
Preparing the Pork and Vegetables
1. Heat up pan on medium high heat with oil.
2. Saute garlic until slightly brown and add in onions and tomato.
3. Add in ground pork, water, and potatoes.
4. Let the water reduce and season with fish sauce.
Preparing the Eggplant
1. Poke holes into the eggplant and microwave for about 3-4 minutes or until soft and brown.
2. Let it cool.
3. Cut each eggplant down the middle (but not all the way down) and flatten using a fork.
Preparing the Egg Mixture
1. Beat 3 eggs in a bowl and sprinkle in salt.
2. Mix some of the beaten egg with the giniling so the egg can bind the mixture.
Assembling and Cooking the Dish
1. Add the giniling to the eggplant and place more of the beaten egg on top.
2. Heat up oil on a nonstick pan.
3. Wash and prep the banana leaves.
4. Place the stuffed eggplant in between two banana leaves.
5. Add a plate on top and flip.
6. Remove the top banana leaf and the eggplant should be on top of the egg part.
7. Gently slide the eggplant and banana leaf onto the hot pan.
8. Let it cook for 1-2 minutes.
9. Remove eggplant onto another plate and cover again with banana leaf and plate.
10. Flip again and cook with the egg side on top and eggplant on bottom.
Serving the Dish
1. Enjoy with fish sauce or banana ketchup.
