Kimchi Stew
- 2 c kimchi
- 0.5 lb pork
- 0.5 Onion, thinly sliced
- 3 Green onions, sliced
- 1 tbsp Garlic, minced
- 1 tbsp Soy sauce
- 1 tbsp Sugar
- 1.5 tbsp Sesame oil
- 2 tbsp gochujang
- 1 package tofu, medium/firm

Preparing the Tofu
1. In a pot, bring water to a boil and simmer the tofu for around 5 minutes on medium heat.
2. Drain and cut the tofu into about 1/2 inch thick slices.
Preparing the Kimchi and Pork Mix
1. In a large bowl, combine the kimchi, pork, onion, scallions and the remaining sauce ingredients and mix well, set aside for 15 minutes.
Cooking the Kimchi and Pork Mix
1. Heat a pan over medium-high heat and add the kimchi and pork mix.
2. Cook until the kimchi becomes soft, the pork is cooked through, and most of the liquid generated during the cooking process is evaporated, about 5 - 6 minutes.
Serving the Dish
1. Arrange the tofu slices nicely on a plate leaving an open space in the middle part.
2. Place the stir-fried kimchi and pork in the middle and serve.
3. Or, you can serve the stir-fried kimchi and tofu side by side.
