Meatball Ingredients
- 1 lb Ground beef
- 1 tbsp Kosher salt
- 1 tbsp Pepper
- 0.5 tbsp chicken bouillon
- 0.25 tsp Red chili flakes
- 0.5 c Mushrooms, finely chopped (shiitake, Bella, cremini any kind works)
- 6 clove garlic & 1/2 shallot
Tamarind Glaze
- 4 tbsp tamarind paste/concentrate
- 3 tbsp Fish sauce
- 2 tbsp Oyster sauce
- 4 tbsp water
- 1 tbsp sambal or sriracha
- 2.5 oz palm sugar
- 0.5 Lime, juiced

Preparation of Meatballs
1. Chop or use a food processor to cut up garlic, onions & mushrooms.
2. In a bowl add ground beef, seasonings under “meatball ingredients”, half of the onion/shallots, & finely diced mushrooms.
3. Mix well & form into party size meatballs.
4. In a pan on medium heat add 2 tbsp of neutral oil & sear the meatballs for 1-2 minutes on each side (top & bottom).
5. Remove partially cooked meatballs from the pan & remove excess oil.
Preparation of Tamarind Glaze
1. In the same pan medium-low heat add other half of garlic/shallots mixture. Sauté for 1-2 minutes.
2. Next add sauces under “tamarind glaze” ingredients & squeeze 1/2 a lime juice in. Let the sauce cook for 2-3 minutes until the sugar has dissolved.
3. Add meatballs back in the pan, cover & let them cook for 5 minutes or until the meatballs are fully cooked.
4. Remove the meatballs & turn up the heat so the sauce can thicken up & turn into a glaze. Once the sauce thickens, turn off the heat & toss the meatballs in.
Final Touches
1. Top off with more fresh lime juice, add fresh cilantro & green onion.
