- 1 c Sweet potato, cut, peeled and steamed
- 1 c 00 flour
- 2 Garlic cloves, minced
- 1 tbsp Nutritional yeast
- 1 tsp Nutmeg
- 1 tsp Salt

1. Mash your steamed sweet potatoes until extra smooth. Make sure there are no lumps!
2. Mix in some flour, salt, nutmeg, garlic and nutritional yeast until the mixture is homogenous.
3. Knead the dough until slightly elastic, adding flour when it gets too sticky.
4. Generously cover with flour and roll into a log. Cut into desired pieces
5. Cook in salted boiling water for about 2 minutes, or until the the pieces float to the surface. Let set on a lined tray.
6. For best results, pan-sear the gnocchi with a bit of oil and butter after boiling to get a crispy exterior. Toss in your favourite sauce!
