- 4 oz Sun-dried tomatoes, in oil
- 8 clove Garlic, minced
- 0.25 tsp Salt
- 0.25 tsp Black pepper
- 14 oz Coconut milk
- 1 tbsp Nutritional yeast
- 8 oz Pasta
- 1 tsp Dried basil
- 1 tsp Red pepper flakes
- 0.25 c pasta water
- handful spinach
- vegan parmesan cheese

1. Chop the sun-dried tomatoes (if not julienned) then add to a pan on medium heat along with half the oil from the jar.
2. Once oil is sizzling, add garlic and mix. Fry garlic and sun-dried tomatoes for 3-4 minutes.
3. Add salt, pepper, and basil and mix well.
4. Once fragrant, add coconut milk and nutritional yeast and mix until the color turns light orange.
5. Place on low heat and cover with lid for 15 minutes to allow the sauce to develop.
6. In a separate bowl, boil water and a pinch of salt then add your pasta. Remove when al dente but save pasta water before straining.
7. Uncover the sauce and check to see if it’s reduced. Add pasta water to loosen up the sauce and add spinach.
8. Raise heat to medium and allow the spinach to shrink before adding pasta. Top with chili flakes and vegan cheese.
9. Remove from heat and enjoy!
