Ingredients

Spring Rolls
- 4 rice paper wrappers
- 2 oz rice noodles
- 2 romaine lettuce leaves
- 1 Carrot, julienned
- 1 Cucumber, julienned
- 1 c Red cabbage, shaved
- 1 Avocado, sliced
- 4 Radishes, sliced
- 0.333 c Mint
- 0.333 c Cilantro
- 0.25 c crushed peanuts
Peanut Sauce
- 0.333 c Peanut butter, without additives
- 0.333 c Orange juice, fresh
- 1 tbsp Rice vinegar
- 1 tbsp Tamari
- 1.5 inch Ginger, peeled

Directions

To make the rolls
1. Dip the rice paper in water for a few seconds until it becomes pliable.
2. Then, add a small amount of each filling ingredient to the center of the rice paper, including boiled rice noodles, julienned carrots, and cucumbers, shaved red cabbage, sliced avocado, fresh mint, cilantro, and crushed peanuts.
3. Tightly roll up the rice paper, leaving the ends open.
4. Then cut the roll into bite-sized pieces with a sharp knife.
For the peanut-ginger dipping sauce
1. Blend peanut butter, fresh orange juice, rice vinegar, tamari, and peeled ginger until smooth.
2. Adjust the consistency with additional orange juice as needed, depending on the type of peanut butter used.
