Ingredients

Steak Sandwich
- 1 Ribeye Steak
- 1 Shallot, diced
- 0.5 Jalapeno
- 0.5 c shiitake mushrooms, diced
- 0.5 Tomato, diced
- 1 tsp Worcestershire sauce
- 0.5 tsp Adobo Seasoning
- 0.5 tsp Garlic powder
- salt and pepper, to taste
- Fontina Cheese
- Tuscan Bread
- 2 tbsp Olive oil
- 5 tbsp Unsalted butter
- 3 Fresh Sprigs of Rosemary
- 2 Garlic cloves, smashed
- 1 Red bell pepper, diced

Directions

Cook the Ribeye Steak
1. Let your steak sit out at room temperature for about 30-45 minutes.
2. Season the ribeye steak generously with salt and pepper.
3. In a skillet over high heat, add a tablespoon of olive oil to the hot pan. The pan should be lightly smoking before you add the oil. Please make sure to use a high smoke point cooking oil like peanut oil, canola oil, grapeseed oil, avocado oil, or extra virgin olive oil.
4. Place the ribeye steak in the hot skillet and press down lightly to develop a nice crust.
5. Sear the steak to your desired doneness, flip it, and then add 4 tablespoons of butter to the pan, fresh rosemary, and a couple of smashed garlic cloves. Baste the steak with the melted butter for about 30 seconds.
6. Cook the steak to your preferred doneness.
7. Remove the steak from the skillet and let it rest on a cutting board for at least 10 minutes. This allows the juices to redistribute and ensures a juicy steak.
8. Discard the butter and aromatics in the skillet used to sear the steak.
Prepare the Sandwich Ingredients
1. Using a cutting board, dice the rested ribeye steak into bite-sized pieces, about 1/4 inch pieces.
2. Dice the shallot, jalapeno, shiitake mushrooms, and tomato.
Sauté the Vegetables
1. In the same skillet, add a tablespoon of olive oil over medium-high heat.
2. Toss the diced shallot, jalapeno, shiitake mushrooms, and tomato into the skillet.
3. Add a dash of Worcestershire sauce, Adobo seasoning, garlic powder, and season with salt and pepper. Stir until all ingredients are combined and the vegetables are cooked. This should take 2-3 minutes.
Combine Steak and Vegetables
1. Add the diced ribeye steak into the vegetable mixture and cook briefly to incorporate the flavors. Remove from heat.
Assemble and Cook the Melt
1. In a separate large skillet, over medium-high heat, add a touch of olive oil.
2. Place one slice of Tuscan or artisan bread into the skillet.
3. Add a portion of the prepared steak and vegetable mixture on top of the bread slice.
4. Layer some Fontina cheese over the meat and vegetables.
5. Place the other slice of bread on top to create a sandwich. Lightly press the sandwich together.
6. Melt 1 tablespoon of butter in the skillet.
Finish Cooking the Melt
1. Allow the sandwich to cook in the skillet until the bottom slice of bread turns golden brown and crispy, which should take about 3-4 minutes.
2. Carefully flip the sandwich and cook the other side until it's golden brown, and the cheese has melted, which should take another 3-4 minutes.
3. Once both sides are nicely browned, remove the Buttered Skillet Ribeye Steak and Cheese Melt from the skillet.
4. Place it on a cutting board and slice it in half diagonally and serve.
