- 8 oz Spaghetti
- 0.5 c Tomato paste
- 400 ml passata
- 3 clove Garlic, finely chopped
- 0.5 tbsp Red chili flakes, adjust depending on the desired level of spiciness
- 0.25 c Olive oil
- 1 tsp Salt, or to taste
- 0.5 tsp Pepper
- 0.5 l water, approximately

Start with the broth
1. Make the broth by mixing tomato paste and water in a pot and boil for a few minutes.
Prepare the sauce
1. In a cast-iron pan, heat olive oil over medium-high heat and add garlic and chili.
2. Roast for 30 seconds, and then add the passata.
3. Cook for a few minutes until the sauce has reduced.
Prepare the pasta
1. Add the dry spaghetti on top of the sauce and coat well.
2. Toast the pasta for a few minutes until it starts to become crispy and caramelize.
3. Add 1-2 ladles of the tomato broth.
4. As the pasta begins to soften, gently move it around with a wooden spatula.
Final steps
1. Once the broth has reduced and the pasta begins to stick and burn, add more broth.
2. Keep repeating these steps until the pasta is cooked al dente.
3. Serve immediately and enjoy!
