- 255 g sourdough discard
- 140 g bread flour
- 4 tbsp butter
- 3 tbsp rosemary
- 2 tbsp thyme
- 0.5 tsp salt
- 1 tsp flaky sea salt
- 2 tbsp olive oil

1. In a bowl, add your discard, 1/2 tsp salt, rosemary, thyme, flour, and butter and mix to combine.
2. Cover and refrigerate for 30 minutes.
3. Spread out the dough onto parchment paper and roll flat with a rolling pin, to desired thickness.
4. Pour oil on top and quickly brush the oil evenly across the dough, as the dough will quickly absorb it.
5. Using a fork, prick holes throughout the dough. This will help the crackers bake and will help to keep the crackers from puffing up.
6. Using a dough cutter, cut the dough into squares.
7. Sprinkle with flaky sea salt.
8. Bake at 350F for 28-30min or until lightly golden brown.
