- 1 can Chickpeas, drained and rinsed
- 2 c Kale, chopped
- 1 c Cherry tomatoes
- 1 Onion, diced
- 3 clove Garlic, minced
- 0.5 tsp Ginger powder
- Salt, to taste
- Pepper, to taste
- 0.25 tsp Allspice
- 1 tbsp Smoked paprika
- 1 tsp Chili powder
- 2 Russet potatoes, peeled and cut into chunks
- 1 tbsp Curry powder
- pinch Red pepper flakes
- 4 c vegetable broth
- Dry white wine, a splash (optional)

Directions

Preparation of Ingredients
1. In a large pot or Dutch oven, heat some oil over medium heat.
2. Add the diced onion and minced garlic and cook until the onion becomes translucent and the garlic is fragrant.
Adding Spices
1. Add the ginger powder, salt, pepper, allspice, smoked paprika, and chili powder to the pot.
2. Stir well to coat the onions and garlic with the spices, and cook for another minute to enhance the flavors.
3. If using, deglaze the pot with a splash of dry white wine, stirring to scrape up any browned bits from the bottom.
Adding Main Ingredients
1. Add the chickpeas, kale, cherry tomatoes, and potato chunks to the pot.
2. Stir everything together to combine.
3. Pour in the vegetable broth and bring the mixture to a boil.
Simmering the Stew
1. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 40 minutes, or until the potatoes are tender and the flavors have melded together.
2. Taste the stew and adjust the seasonings if needed. If you like it spicy, you can add a pinch of red pepper flakes for an extra kick.
Serving the Stew
1. Serve the chickpea and potato stew hot, garnished with some fresh herbs if desired.
