Ingredients

Pork Belly Marinade
- 1.5 lbs pork belly
- 6 cloves star anise
- 8 cloves Garlic, whole
- 3 thai chili peppers
- 1 tbsp Ginger, grated
- 1 tbsp peppercorns
- 3 bay leaves
- 2 tbsp Mirin
- 1 c Soy Sauce
- 1 c Teriyaki sauce
- 1 c Brown sugar
- 0.5 c Granulated sugar
- 2 tbsp Rice Wine Vinegar
- 2 tbsp Oil

Directions

Preparation of Pork Belly
1. Pat the pork belly dry with a paper towel.
2. Dice your pork belly into cubes.
3. In a large pot, add the oil once the pot gets hot.
4. Add the pork belly and sear on all sides until it develops a nice crust.
5. Immediately remove the pork belly.
Adding Spices and Sauces
1. Add the peppercorns, star anise, garlic, bay leaves, ginger, and chili peppers. Toast it for about 3-4 minutes.
2. Add back the pork belly and mix everything together.
3. Add the soy sauce, mirin, teriyaki sauce, brown sugar, granulated sugar, and rice wine vinegar.
4. Mix everything until well incorporated.
Simmering and Serving
1. Fill the pot with enough water to cover the pork belly and turn on low to simmer.
2. Simmer for about two hours.
3. Turn the heat on high and cook for about 10 minutes until the mixture becomes sticky.
4. Serve with rice and enjoy!
