Tofu and Noodles
- 10 oz Hodo Miso Tofu
- 1 tsp Cornstarch
- 1 tsp Soy sauce
- 1 tsp Maple syrup
- 1 c green cabbage
- 1 Scallion, roughly chopped
- 2 tbsp Vegetable oil
- 1 tbsp roasted peanuts
- 2 tbsp peanut sauce
- 3 oz rice noodles

Cooking the noodles
1. Cook the noodles according to package instructions.
Preparing the cabbage and scallion
1. Prepare the cabbage and scallion.
2. Microwave the chopped scallions with 1 tbsp of oil for 10 seconds.
3. Crush the roasted peanuts in a mortar and pestle.
Preparing the tofu
1. Shred the tofu with a cheese grater.
2. Heat up a nonstick pan with 1 tablespoon of oil.
3. Add the shredded tofu, cornstarch, soy sauce, and maple syrup to the pan.
4. Cook until crispy, about 5 minutes.
Assembling the dish
1. Assemble this dish with noodles, green cabbage, and miso tofu.
2. Garnish with scallion oil and crushed peanuts.
3. Add a drizzle of peanut sauce to finish.
