Salad Ingredients
- 3 Persian cucumbers, chopped
- 3 Roma tomatoes, chopped, seeded
- 0.5 Red onion, chopped
- 0.25 green pepper
- 2 tbsp Cilantro, chopped
- 2 tbsp Parsley, chopped
- 0.5 c Athenos crumbled feta cheese
- 0.5 c pomegranate seeds
Dressing
- 3 tbsp Extra virgin olive oil
- 3 tbsp Lime juice, freshly squeezed
- 0.5 tsp Kosher salt
- 0.25 tsp Black pepper, freshly cracked
- 0.25 tsp dried mint

Directions

1. In a large bowl, place the cucumbers, tomatoes, red onions, green peppers, cilantro and parsley.
2. In a small bowl or jar, whisk together the olive oil, lime juice, salt and pepper until well combined.
3. Drizzle the dressing over the salad and toss gently to combine.
4. Add feta cheese and pomegranate arils on top and serve immediately.
