For the tataki
- 1 Tuna Loin
- 1 Tbs Peanut Oil
- pinch Salt
- 1 Tbs Fresh black pepper
- 2 Tbs Mixed sesame seeds
- 1 Tbs Yellow Mustard
To serve
- 1 Tbs Ginger, grated
- 1 stem Green onion, in diagonal slices
- 1 Tbs Soy sauce
- 1 Tbs Sesame oil
- 1 Tbs Lime juice
- 2 Tbs Chives, finely chopped

For the tataki
1. Brush the tuna with peanut oil and season with salt and fresh black pepper. Heat a pan and seal the tuna for approx. 20 seconds on each side. Brush lightly with mustard and coat with sesame seeds.
2. Wrap with plastic wrap and chill for 20 minutes.
To serve
1. Mix all the ingredients in a bowl. With a sharp knife, slice the tuna in very thin slices.
2. Place in a plate and baste with some sauce, to taste. Sprinkle some chives and lime zest on top.
3. Share and enjoy.
