- 2 c all-purpose flour
- 0.5 tsp Salt
- 0.5 c water, boiled
- 0.25 c water, room temperature
- Flour, for dusting
- 3 tbsp Oil, for cooking
- 0.5 c all-purpose flour
- 1 tsp Salt
- 0.5 tsp Chinese five-spice powder
- 0.5 c Neutral oil
Dipping Sauce
- 1 tbsp Light soy sauce
- 1 tsp Chinese black vinegar
- 1 tbsp chili oil
- Scallions

Preparing the Dough
1. Add flour and salt to a large mixing bowl.
2. Slowly add boiled water as you mix in one direction with a pair of chopsticks, followed by room-temperature water.
3. Then knead with your hands until the dough becomes smooth.
4. Cover with a towel and rest for 30 minutes.
Preparing the Scallions
1. Prepare 6-8 stalks of scallions, slice them in half lengthwise and finely chop them.
Preparing the Roux
1. Make the roux by combining flour, salt, five-spice, and heated oil.
2. Mix well.
Rolling and Filling the Dough
1. Dust the surface with flour and cut the dough into 4 pieces.
2. Keep the rest of the dough covered while working one piece at a time.
3. Roll and flatten the dough out into a large thin layer.
4. Add 2-3 spoons full of roux and spread it out evenly.
5. Sprinkle scallions on top.
6. Roll up the dough into a log and twist it into a coil.
7. Cover while working on the rest.
Cooking the Pancakes
1. When it's time to cook, use a rolling pin to roll the coil into a flat, round pancake.
2. Add oil to a skillet or cast iron over medium-high heat and lay the pancake in the pan.
3. Let it cook for 1-2 minutes until the edge turns brown.
4. Flip and repeat on the other side.
Final Steps
1. Cut them into small pieces and serve with dipping sauce.
