Ingredients

Chickpeas
- 1.5 c cooked chickpeas
- 1 tsp Curry powder
- 0.25 tsp Salt
- Pepper, to taste
Veggies
- 1 c broccoli florets
- 0.5 c Bell peppers, sliced
- 0.5 c Carrot, grated
Tahini Sauce
- 0.25 c Tahini
- 0.25 c water, Adjust as needed
- 1 clove Garlic
- 2 tbsp Lemon juice
- 3 dates
- 0.25 tsp Salt

Directions

Prepare the Chickpeas
1. Drain your chickpeas, do not rinse them.
2. Add curry powder, salt, and pepper.
3. Toss to mix.
4. Spread chickpeas out on a parchment-lined baking sheet.
5. Bake on 375 F for 10-15 minutes, or until chickpeas have reached your desired texture.
Prepare the Veggies
1. Cut and lightly steam broccoli florets.
2. Grate the carrots and slice the red bell peppers.
Making the Sauce
1. Combine all ingredients in a blender.
2. Blend until smooth.
Put it All Together
1. Cook quinoa or millet and add to a bowl.
2. Top with roasted curry chickpeas and your favorite veggies.
3. Drizzle generously with tahini dressing.
