For the sauce
- 4 Tbs Olive oil
- 1 tsp Sesame oil
- 1 clove Garlic, finely diced
- 1 Tbs Ginger, chopped
- 2 chile de árbol
- 1 cup peanuts
- 0.5 cup Water
- pinch Salt flower
For the onions
- 1 Tbs Canola oil
- 0.5 Onion, sliced
- 4 Serrano peppers, seedless and sliced in strips
- 1 Tbs Soy sauce
- 1 Tbs Lime juice
- 1 Tbs Worcestershire sauce
- pinch Fresh black pepper
For the tacos
- 6 rib eye steaks, approx. 90g each
- pinch salt and fresh black pepper
- 8 Flour tortillas
- 3 Tbs Cilantro, washed and disinfected

For the sauce
1. Heat the oil in a pan and add the garlic, ginger and chile de árbol. Cook for 30 seconds or until the ingredients are fragrant. Transfer to the food processor with the rest of the ingredients. Blend until you get a thick and homogenous mix.
For the onion
1. Heat the oil in a pan and add the onion and serrano. Sautee until the onion changes color. Add sauces, lime juice and pepper. Cook for a few minutes on low heat until the onion softens and lightly caramelize.
2. Keep warm to the side.
For the tacos
1. Season the steaks with salt and pepper. Sear in a hot grill for 3 minutes on each side or until your desired term. Transfer to a chopping board and rest for 5 minutes before slicing to preserve its juices. Assemble your tacos with warm tortillas, sliced rib-eye, onions and top with peanut sauce and cilantro garnish.
