Ingredients

Pork Belly
- 2 lbs pork belly
- 2 tbsp Oil
- 2 Ginger, slices
- 4 Green onions, 2” pieces
- 2 Star anise
- 3 tbsp rock sugar
- 0.333 c Shaoxing wine
- 3 tbsp Soy sauce
- 2 tbsp Dark soy sauce
- 2 c blanching liquid

Directions

Preparation of Pork Belly
1. Start by cutting your pork belly into 1-inch thick pieces.
2. Bring a medium-sized pot of water to a boil.
3. Blanch the pork belly pieces for 3-4 minutes.
4. Skim and remove the brown foam from the top.
5. Take the pork out, rinse, and set aside.
6. Reserve the blanching liquid for later.
Cooking the Pork Belly
1. In a separate medium-sized pot, add the oil and sugar and cook over low heat.
2. Melt the sugar and add the pork.
3. Raise the heat to medium and cook for around 5 minutes until the pork is lightly browned.
4. Add the Shaoxing wine, regular soy sauce, dark soy sauce, blanching liquid, ginger, green onions, and star anise.
5. Turn to high heat until the broth comes to a boil.
6. Cover and simmer over medium-low heat for about 1.5 hours until pork is tender.
7. Stir every 20 minutes.
Finalizing the Dish
1. Once the pork is fork tender, remove the lid and bring to high heat to reduce and thicken the sauce.
2. Cook on high heat for around 15 minutes until you get the consistency you want.
