Sushi Rolls
- 4 nori sheets
- 1 c sushi rice
- 0.25 c beet juice
- 1 tbsp Rice vinegar
- 1 Yellow bell pepper, sliced lengthwise into strips
- 1 Red bell pepper, sliced lengthwise into strips
- 1 Carrot, julienned
- 0.5 Cucumber, julienned
- 1 c Spinach
- 0.5 c pickled red cabbage
- 1 tbsp wasabi
- 0.25 c Soy sauce, or tamari

Prepare the sushi rice
1. Prepare the sushi rice according to package instructions.
2. Season with rice vinegar and let it cool completely.
3. Divide into parts and color one part with the fresh beet juice for a vibrant pink color.
Prepare the veggies
1. Meanwhile, prepare your veggies.
2. Cut yellow and red bell peppers, carrots, and cucumber into thin strips.
3. Add some spinach leaves and pickled red cabbage for added flavor and texture.
Assemble the sushi
1. Place a sheet of nori seaweed on a bamboo mat and spread the cooked sushi rice over it.
2. Add the veggies to the center of the rice and roll the sushi tightly using the mat.
3. Cut into bite-sized pieces and serve with wasabi, soy sauce, or tamari.
