Ingredients

Cake
- 5 Egg, Separate yolk from whites
- 1 c Flour
- 1 c Granulated sugar
- 1 tsp Baking powder
- 0.333 c Milk
- 10 fl oz Pumpkin Puree
Milk Mixture
- 1 can sweetened condensed milk
- 1 can evaporated milk
- 1 c Heavy cream
- 1 tsp Pumpkin Spice
- 1 tsp Vanilla extract
Whipped Topping
- 2 c Heavy cream
- 0.75 c Powdered sugar
- 1 tsp Pumpkin Spice
- 1 tsp Vanilla extract

Directions

1. Preheat oven to 350 degrees. In 2 bowls, seperate eggs whites from egg yolks. Whip the egg white with an electric mixter or stand mixer and after 1 minute add in 1/4 cup of sugar. Continue to mix until soft peaks form.
2. In the bowl with egg yolks add the remaining 3/4 cup of sugar and whisk well. Add in milk, vanilla, flour and baking powder until well combined.
3. Combine egg yolk mixture with eggs whites. Fold the two together. Careful not to over mix.
4. Pour cake mixture into a grease baking dish and bake for 20-25 minutes.
5. While the cake is baking, combine all milk mixture ingredients in a bowl and set aside in the fridge.
6. Once cake is baked and cooled, poke holes at the top with a fork and pour over the milk mixture and let the cake soak it up.
7. Prepare your whipped cream (optional) or use ready made whipped topping.
8. Top your cake off with whipped cream and dust some more pumpkin spice on top. Refrigerate before serving. Enjoy!
