- 1 pumpkin
- 2 c Chickpeas, boiled
- 0.25 c Tahini
- 0.25 c Aquafaba
- 1 Lemon, juiced
- 1 tsp Cumin, ground
- 1 clove Garlic, optional
- 0.5 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste
- 1 tbsp Extra virgin olive oil
Garnish
- 2 tbsp Chickpeas
- 1 tbsp Parsley, chopped
- 1 tbsp Pumpkin seeds
- 0.25 tsp paprika powder
- Olive oil, drizzled

Directions

Preparing the Pumpkin
1. Begin by baking the entire pumpkin in the oven at 395 degrees F for about 40-50 minutes.
2. You can pierce the pumpkin with a long skewer to see if it’s ready.
3. The cooking time depends on the size of your pumpkin.
4. Let it cool slightly and chop the top off.
5. Carefully scrape out the seeds and the pumpkin flesh with a spoon.
6. Be sure to keep the sides and base intact.
Preparing the Hummus
1. In a food processor, blend 1 cup of the pumpkin flesh with the chickpeas, tahini, and all other ingredients.
2. Pulse until smooth, adding a little olive oil or water if necessary to reach your desired consistency.
3. Optionally, add garlic.
4. Add the hummus back to the scraped-out pumpkin and use it as a serving bowl.
5. Garnish with a few chickpeas, chopped parsley, pumpkin seeds, and paprika powder, and drizzle with olive oil.
6. Enjoy!
