- 115 grams Cake flour
- 75 grams White sugar
- 0.5 tsp Salt
- 0.25 tsp Baking soda
- 1 tsp Cinnamon
- 2 tsp pumpkin spice
- 2 Egg
- 150 grams oil
- 213 grams Pumpkin Puree
Buttercream ingredients
- 110 grams Butter
- 180 grams Cream cheese
- 420 grams icing sugar
Biscoff crust
- 200 grams Biscoff Cookies
- 50 grams Butter, melted

1. Whip eggs and sugar together until light in colour and glossy. whip in the pumpkin puree until homogeneous.
2. While whisking, add in the oil slowly to emulsify into the batter. Once all mixed, fold in the dry ingredients, sifted.
3. For the crust, mix two ingredients together until it looks like wet sand. Add more butter if it does not come together.
4. With a lined cupcake pan, press 1/4 cup of the crust into each liner, and then fill the cupcake liners 3/4 of the way with the pumpkin batter.
5. Bake at 350F for 20-22 min, or until a toothpick comes out clean.
6. For the buttercream, beat the butter and cream cheese together until fluffy. Add and mix in the icing sugar.
7. Decorate and garnish!
