- 0.5 c Coconut oil, melted, or olive oil
- 1 tsp Vanilla extract
- 1 c pumpkin purée
- 1.5 c Flour, all purpose or gluten free
- 1 tsp pumpkin pie spice
- 1 tsp Cinnamon
- 1 tsp Baking soda
- 0.5 tsp sea salt
- 0.75 c Coconut sugar, or brown sugar
- 4 oz Cream cheese, softened
- 0.25 c Sugar
- 1 large egg yolk

1. First, preheat your oven to 350 degrees Fahrenheit.
2. Line a 9-inch by 5-inch bread pan with parchment paper.
Make the Bread Mixture
1. In a mixing bowl, combine the eggs, melted coconut oil, vanilla, and pumpkin purée. Stir together.
2. Sift in the flour, pumpkin pie spice, cinnamon, baking soda, sea salt, and coconut sugar. Stir together.
Prepare the Filling
1. Then, make the filling.
2. Add the softened cream cheese, sugar, and egg yolk to a clean mixing bowl.
3. Use an electric mixer to beat until completely creamy and smooth.
Assemble the Bread
1. Pour ¾ of the pumpkin bread batter into the parchment lined bread pan.
2. Spread the filling mixture on top. Smooth into an even layer.
3. Top with the remaining pumpkin bread batter. Smooth into an even layer.
1. Bake for 40 to 50 minutes, or until a toothpick inserted into the center comes out mostly clean.
Final Step
1. Finally, remove the pan from the oven.
2. Allow the bread to fully cool before slicing.
