Pumpkin Cookies Recipe (with Video)

Method
1. mix the browned butter with the pumpkin puree, and mix with the brown sugar until smooth.
2. Add and whisk the egg yolk into the mixture. Then fold the dry ingredients into the wet ingredients.
3. refrigerate for at least one hour to let the ingredients set.
4. Roll the cookie dough into 60g balls and roll in the sugar and spice mixture for coating. Slightly press down onto a baking tray lined with parchment paper
5. Bake at 350F for 10-12 min. Let rest for at least 15 min before eating!
