Swirl Filling
- 6 tbsp Brown sugar
- 1 tsp pumpkin pie spice
- 1 tsp Cinnamon
- 4 tbsp Butter, melted
- 1.5 c Buttermilk
- 1 c pumpkin purée
- 1 Large egg
- 2 tbsp Vegetable oil
- 1 tsp vanilla
- 2 c Flour
- 3 tbsp Brown sugar
- 2 tsp Baking powder
- 1 tsp Baking soda
- 2 tsp pumpkin pie spice
- 0.5 tsp Cinnamon
- 0.5 tsp Salt
- 1.5 c Powdered sugar
- 0.5 tsp vanilla
- 3 tbsp Milk

To make the filling
1. Combine brown sugar, pumpkin pie spice, cinnamon and melted butter.
2. Transfer to a piping bag or plastic storage bag.
To make the pancake batter
1. In a large bowl, whisk together buttermilk, pumpkin, oil, egg and vanilla.
2. Add the flour, baking powder, baking soda, pumpkin pie spice, cinnamon and salt and stir until combined.
To cook the pancakes
1. Drop spoonfuls of batter onto a hot greased griddle or pan and allow to cool until bubbles form on top.
2. Swirl some of the brown sugar filling on top of each and then flip over.
3. Continue to cook until fluffy.
4. Serve with glaze or maple syrup.
5. Enjoy!
