Ingredients

Main Ingredients
- 3 lb Chuck Roast
- 2 Celery stalks, diced
- 1 Yellow onion, diced
- 5 Carrots, 2 diced for the mirepoix 3 cut at an angle for later
- 3 Yukon gold potatoes, cubed
- 4 clove Garlic, minced
- 2 tbsp Tomato paste
- 2 tbsp Flour
- 1 c Red wine
- 3 c beef broth
- 4 tbsp Olive oil, divided into half
Seasonings
- 2 tbsp smoked salt
- 2 tbsp Pepper
- 2 tbsp roasted garlic
- 1 tbsp Onion powder
- 1 tbsp Smoked paprika
- 0.5 tsp Tony’s No salt Cajun seasoning
- 5 sprigs Thyme
- 2 Rosemary
- 2 Bay leaves

Directions

Preparation of Chuck Roast and Mirepoix
1. Dice the mirepoix and set to the side.
2. Rub the chuck roast down with olive oil, then season with the seasoning above.
3. Heat 2 tablespoons of olive oil in a Dutch oven and sear the chuck roast for about two minutes per side.
4. Remove the roast, then add mirepoix and sauté for about five minutes.
5. Add in the garlic and sauté until fragrant.
Adding Tomato Paste and Flour
1. Stir in the tomato paste and cook for about two minutes.
2. Then add in the flour and cook for about three minutes.
Deglazing and Simmering
1. Pour in the wine and deglaze the bottom of the pot with a wooden spoon.
2. Let the wine reduce by half then pour in the beef broth.
3. Add the chuck roast back to the pot along with thyme, rosemary, and bay leaves.
4. Bring to a simmer, cover, and bake in a 325-350° oven for about two hours.
Adding Potatoes and Carrots
1. After two hours, add in the potatoes and carrots.
2. Season lightly with your favorite all-purpose seasoning, then cook for another hour.
3. Serve this over mashed potatoes and enjoy.
