- 12 oz Portobello mushrooms
- 1 tbsp Paprika
- 1 tsp Paprika, smoked
- 2 tsp Cumin
- 2 tsp Garlic powder
- 1 tsp Onion powder
- 0.5 Onion, cut into strips
- 1 Red pepper, cut into strips
- 1 Jalapeño, to taste
- 2 tsp Salt
- 3 tbsp date paste
- 4 tortillas
- 0.333 c vegan cheese
- 1 Avocado, sliced

Directions

Prepare the Mushrooms
1. Slice mushrooms into strips and add to a bowl.
2. Add seasonings and mix. Set aside.
Cook Your Veggies
1. Heat ¼ cup of water on medium-high heat.
2. Add onions and cook until they begin to soften.
3. Add mushrooms and allow to cook for 3-5 minutes.
4. Add red pepper and jalapeno pepper.
5. Continue another 3-5 minutes, or until peppers are cooked, but not too soft.
6. Add date paste and salt. Mix.
Put It Together
1. On a flatbread, add the portobello mixture.
2. Top with vegan cheese and avocado.
3. Enjoy!
