Ingredients

Zucchini and Pork
- 4 Zucchini, medium sized, cut julienne or similar to
- 1 lb Ground pork
- 1 c Yellow onion, diced
- 4 clove Garlic, smashed and thinly sliced
- 3 c Cherry tomatoes, sliced in half lengthwise
- 0.25 c sesame leaf
- 1 quart mushroom broth
- 0.25 c Parmesan, grated
- 2 tbsp Soy sauce
- 1 tbsp Chili powder, ground
- 1 tbsp Cumin, ground
- 1 tbsp mushroom powder
- 1 tsp msg
- 3 tbsp Olive oil
- Salt, to taste
- Pepper, to taste

Directions

Preparing the Zucchini
1. Using a vegetable peeler, peel zucchini into strips. Stop peeling once you begin to hit the seeds.
2. Rotate the zucchini and continue peeling, working all of the way around each zucchini.
3. Reserve the center of the zucchini for another dish.
4. Stack your strips neatly and slice, length wise, about 2 millimeters thick.
Cooking the Pork
1. Warm olive oil in a sauté pan over medium-high heat.
2. Add ground pork.
3. Using a spatula, break the pork into tiny pieces and spread across the pan.
4. Add a healthy pinch of salt and cook for 10 minutes, letting the meat brown and stirring once or twice along the way.
5. Stir in onions and garlic and let cook for another 5 minutes, stirring occasionally.
6. Season with cumin, MSG, chili and mushroom powder.
7. Stir in tomatoes, mushroom broth, soy sauce and sesame leaf.
8. Lower the heat to a gentle simmer and reduce for 30 minutes.
Final Steps
1. Stir in parmesan and add in zucchini.
2. Stir constantly with tongs and season to taste with salt and pepper.
3. You only need to cook the zucchini for 2 or 3 minutes.
4. Plate in a bowl and garnish with sesame leaf and more parmesan.
