Main Ingredients
- 2 Large carrots, peeled and thinly sliced
- 1 bunch of scallions
- 6 oz snow peas
- 6 clove Garlic, roughly chopped
- 12 oz NY strip or sirloin
- 1 Tsp Salt
For the Sauce
- 0.5 C Peanut butter
- 0.25 C Soy sauce
- 3 Tbsp Rice vinegar
- 2 Tbsp Sriracha, (depending on spice level)
- 1 Tsp Sesame oil
- 1 Tsp Fish sauce
- 14 oz udon noodles, (could also use spaghetti or linguine) - cooked according to the package (you can do this ahead of time if you want)
- Crushed peanuts

Prepare the Sauce
1. In a large bowl or measuring cup, add the peanut butter through fish sauce and whisk to combine.
2. Set to the side.
Prepare the Meat
1. Heat up a large skillet or wok and then add some high smoke point oil (canola, grape seed, avocado, etc.) - just enough to cover the bottom.
2. Add the steak and salt and cook for 1-2 minutes.
3. Give it a flip or stir every 30 seconds or so.
Prepare the Vegetables
1. Remove the meat, add a little extra oil if needed and add the carrots, scallion whites and snow peas.
2. Stir fry for a few minutes to soften the carrots and then add the garlic.
3. Stir fry for another 30 seconds to a minute.
Combine and Serve
1. Turn off the heat and add the noodles, meat and peanut sauce and mix well.
2. Plate up and garnish with the scallion greens and some crushed peanuts.
3. Enjoy!
