- 0.25 c roasted peanuts
- 0.25 c Granulated sugar
- 1 puff pastry sheet
- 1 Egg
- 0.5 c smooth peanut butter
- 0.5 c strawberry jelly

Prepare the Dough
1. Pulse peanuts and sugar in a food processor until finely ground.
2. Beat the egg and brush over one side of puff pastry.
3. Sprinkle evenly with peanut sugar mixture and use a rolling pin or your hands to press the mixture into the dough.
4. Carefully flip the dough over and spread evenly with a thin layer of peanut butter.
5. Then spread with a very thin layer of jam.
6. Roll the dough, lengthwise, from opposite ends towards the middle, making sure it’s snug on both sides until they both meet in the center.
7. Transfer to a baking sheet and chill until firm, about 30 minutes.
Prepare for Baking
1. Use a sharp knife to cut into 1/4-inch slices and place on baking sheets lined with parchment.
2. Bake at 425 degrees until golden brown and crispy, 18-20 minutes.
3. Enjoy!
