Pancake Batter
- 1 c Flour
- 0.5 tbsp sodium bicarbonate
- 1 tbsp Sugar, or preferred sweetener
- 1 c oat milk
- 1 tbsp vinegar
- Coconut oil, for cooking
Blueberry Cream
- 0.333 c cashew nuts
- 0.25 c Blueberries
- 0.5 tbsp Coconut oil
- 1 tbsp Lemon juice
- 0.5 c Coconut milk
- 0.5 tbsp agave

For the pancake batter
1. Mix oat milk with vinegar and let it sit for about 5 minutes until the milk curdles.
2. While waiting, mix all the dry ingredients.
3. Then, add the wet ingredients to the dry ones and mix with a whisk until well combined.
4. Let the batter rest for 10 minutes before cooking.
For cooking the pancakes
1. When ready to cook, grease a pan with coconut oil and cook the pancakes over medium heat for about 1 minute on each side until golden brown.
For the blueberry cream
1. Blend all the ingredients together in a small blender.
For the decoration (optional)
1. If desired, you can also decorate with melon balls, granola, berries, coconut flakes, and edible flowers to add some extra flavor and flair.
