Main Dish
- 2 c Jasmine Rice
- 2 Boneless Chicken Breasts
- 1 Tbsp Extra virgin olive oil
- 0.5 c Onion, chopped
- 0.25 c Green bell pepper, chopped
- 0.25 c Red bell pepper, chopped
- 1 tbsp Garlic paste
- 0.25 bunch Cilantro, chopped
- 0.25 c Tomato sauce
- 2 tsp Healthy Rican Adobo
- 1 tsp Healthy Rican Sazón
- 0.25 c Frozen peas
- 0.25 c Carrots, chopped
- 1 tbsp Sofrito
- Salt to taste
- 2 c Water

Preparation of Rice and Chicken
1. Rinse the rice thoroughly in cold water and drain. Set it aside.
2. Season the chicken with adobo.
3. In a large saucepan, heat the olive oil over medium heat.
4. Add the chicken and cook for about 6-8 minutes, until browned on both sides.
Vegetable Preparation
1. Add the onion, garlic, green bell pepper, and red bell pepper to the pan.
2. Add ½ of the chopped cilantro, and reserve the rest to add at the end and garnish.
3. Cook for 3 to 5 minutes, stirring occasionally, until the vegetables are soft.
Sauce Preparation
1. Add tomato sauce and sazón.
2. Stir to combine and let it cook for about 2-3 minutes.
Rice Cooking
1. Add the rice to the pan and stir to coat.
2. Cover with water (1/4 inch above the rice). Add the peas, carrots, and salt to taste.
3. Stir to combine and bring the mixture to a boil over high heat.
4. Reduce the heat to low, cover the pan, and simmer for about 20-25 minutes, or until the rice is tender and the chicken is cooked through.
5. Garnish with the remaining cilantro and enjoy!
