Main Ingredients
- 2 c boiled chickpeas
- 2 clove Garlic, finely chopped
- 2 tbsp harissa
- 1 tbsp Olive oil
- 1 Carrot, grated
- 0.5 c Mint leaves, chopped
- 2 Medjool dates, pitted and chopped
- 0.25 c Almonds, roughly chopped
- 2 tbsp Olive oil
- 1 Lemon, juiced
- 0.5 tsp Cumin
- 0.5 tsp Paprika
- 0.5 tsp Ginger
- 0.25 tsp Cinnamon
- 0.25 tsp Turmeric

Start the cooking process
1. Heat up olive oil in a pan over medium-high heat.
2. Add some minced garlic and cook for about 30 seconds.
3. Then, add in the chickpeas and a spoonful of Harissa paste, and cook for another minute.
4. Once done, let the mixture cool.
Prep the other ingredients and the dressing
1. While the chickpeas are cooling, prep the other ingredients and the dressing.
2. In a bowl, combine the Harissa chickpeas with grated carrot, chopped dates, and fresh mint (saving some for garnish).
3. Then, add in the dressing and mix everything together.
Finish the salad
1. Once the salad is ready, garnish with some chopped almonds and more mint leaves.
2. Enjoy!
