Ingredients

Mofongo
- 3 green plantains
- 1 c Avocado oil, for frying
- 3 tbsp Olive oil
- 3 tbsp Butter
- 4 clove Garlic, minced
- 0.25 c Onions, diced
- Adobo or Salt
- 0.25 c pork crackling

Directions

Preparation of Plantains
1. Peel the green plantains and cut them into 1” chunks.
2. Fry the plantain chunks on medium-high heat until they are golden and tender (5-7 minutes).
3. Remove from the oil and set aside.
Preparation of Garlic and Onion
1. In another frying pan, add the olive oil and butter to medium heat.
2. Add the garlic, onion and cook for a few minutes until translucent.
Mashing and Mixing
1. In a mortar or bowl, add the fried plantains and mash them with the garlic paste until well combined.
2. Add the crispy pork cracklings.
3. Continue mashing and mixing until you achieve a smooth but slightly chunky consistency.
4. Add adobo or salt to taste.
5. If it looks dry, add cold water until you achieve the consistency you like.
Final Steps
1. Shape the mashed plantains into balls or form a hollow ball and stuff with your favorite protein.
