Ingredients

- 0.333 c Milk, + 2 tbsp lemon juice for buttermilk
- 0.667 c Flour
- 1 tsp Baking powder
- 0.5 tsp Baking soda
- 0.5 tsp Salt
- 3 tbsp White sugar
- 1 tbsp Vegetable oil
- 1 Egg, smaller size
- 0.5 tsp Vanilla extract
- 1 tbsp Butter, melted
- 0.333 c Mascarpone cheese, room temperature, can sub ricotta
- 1 tbsp Lemon zest, grated, just the yellow part of the skin
- Blueberries, optional topping
- Maple syrup, for serving

Directions

1. Combine lemon juice and milk and set aside.
2. Mix all dry ingredients in one bowl.
3. Mix all wet ingredients except mascarpone in another bowl.
4. Pour into the dry ingredients and whisk until combined.
5. Add the mascarpone cheese and lemon zest.
6. Whisk until combined.
7. Let the batter rest for 15-20 min. It should become fluffier.
8. Warm a nonstick pan over medium low heat and add a little butter.
9. Pour in about 1/3 to 1/2 cup of the batter depending on how large you want the pancakes.
10. The mix will not be runny. Flatten it slightly and let it cook until you see bubbles.
11. Flip carefully and cook on the other side, achieving a golden color on both sides.
12. You may need to do a test pancake to achieve the right outcome.
13. If adding blueberries, add after pouring the batter on the pan before you flip.
14. Serve warm with some maple syrup and coffee! Enjoy!
