- 2 c mango, fresh (you can use frozen as well)
- 1 c Coconut milk
- 0.75 c condensed milk
- 1.5 c heavy whipping cream

1. Cut mangoes and save a little extra mango chunks for texture.
2. Add mangoes, coconut milk, and condensed milk to a food processor.
3. Blend well and taste to make any necessary adjustments. (You can also add white sugar to make it a little more sweet without masking the coconut flavor)
4. Set mango purée to the side.
5. Pour heavy whipping cream in a deep bowl and whisk until stiff. It’s MUCH faster with a hand mixer. It will significantly reduce the amount of time it takes to get the cream to the right consistency.
6. Once cream is whipped, add the mango purée and mix well.
7. Then add mango chunks and mix well.
8. Pour mixture into a container and cover.
9. Freeze for about 5 hours or overnight.
10. Before serving let ice cream sit out for about 5 minutes.
11. Add whatever toppings you’d like. I added sweetened shredded coconut and shaved dark chocolate chips.
