For the sauce
- 1 Tbs Olive oil
- 2 clove Garlic, chopped
- 0.5 Onion, chopped
- pinch salt and pepper
- 1 Tbs Hot paprika
- 1 Tbs White vinegar
- 0.25 cup tomato puree
- 1 Tbs Flour
- 0.5 cup Vegetable stock
For the potatoes
- 2 Potatoes, diced in large cubes, cooked in unsalted water
- 1 Tbs Olive oil
- 1 tsp Paprika
- pinch salt and pepper

For the sauce
1. Heat the olive oil in a small pot and stir in the garlic and onion. Cook on low heat until soft and translucent. Add salt, pepper and paprika and keep cooking on low heat. Pour in the vinegar and puree and mix perfectly. Powder the flour and stir constantly to lightly toast the flour, keeping it from burning. Stir in the vegetable stock and whisk until fully incorporated and without any lumps.
2. Transfer the sauce to a blender and blend until reaching a liquid but heavy sauce.
For the potatoes
1. Pre-heat your oven to 180ºC/350ºF.
2. Combine all the ingredients in a bowl and spread the potato cubes in a baking tray. Bake for 20 minutes or until golden. Serve with the sauce to the side. Share and enjoy.
