- 0.75 c Unsalted butter, cold
- 0.5 c monk fruit sweetener
- 1 tsp Vanilla extract
- 2 Eggs
- 0.5 tsp Baking soda
- 3 c Almond flour
- pinch sea salt, optional
- 0.5 c Chocolate chips, sugar free

1. First, preheat oven to 350 degrees Fahrenheit.
2. Line a baking pan with parchment paper.
Creating the Dough
1. In the bowl of a stand mixer, add cold butter and monk fruit sweetener.
2. Mix on high for 2 to 3 minutes, until completely creamed together.
3. Be sure there are no clumps of butter left.
4. Then, add in vanilla and eggs.
5. Stir to combine.
6. Add in baking soda, almond flour and sea salt.
7. Stir to combine.
8. Fold in chocolate chips.
Forming and Baking the Cookies
1. Use an ice cream scooper to scoop balls of dough onto lined pan.
2. Space at least 2 inches apart.
3. Bake for 11 to 12 minutes or until edges are lightly golden.
Final Steps
1. Finally, remove cookies from oven.
2. Allow them to cool on pan for 10 minutes before carefully transferring to a cooling rack.
