Ingredients

- 1 beef tongue
- flour or corn tortillas
- 1 bunch Cilantro
- 3 white onions
- 4 clove Garlic
- 4 Limes
- 1 cinnamon stick
- 3 Bay leaves
- 1 tbsp Coriander seeds
- 1 tbsp Black peppercorns
- 4 Roma tomatoes
- 1 Jalapeño
- salt and pepper, to taste

Directions

1. Add beef tongue to a pot with 1 quartered onion, 4 smashed garlic cloves, 1 halved lime, cinnamon stick, bay leaves, coriander seeds, and black peppercorns.
2. Cover in water.
3. Bring to a boil, cover with the lid, and simmer over low for at least 2 hours.
Prepare the salsa
1. Quarter an onion; halve 4 roma tomatoes and a jalapeño.
2. Char onion, tomatoes, and jalapeño over high heat, then pour in a cup of water, cover, and let steam for a few minutes until everything is softened.
3. Remove the lid, and evaporate the water.
4. Pull off heat and add everything to a blender.
5. Add the juice of one lime, salt, and pepper.
6. Blend until smooth.
7. Chop 1/2 bunch of cilantro and add it to the salsa–do not blend though, just mix and set aside.
Prepare the beef tongue
1. Once the beef tongue is done simmering, pull and let cool for 10 minutes.
2. Pull the skin off and slice into 1/2 inch thick slices.
3. Season on both sides with salt and pepper and sear in a wide pan over high heat until caramelized on both sides.
4. Cut into cubes.
Set up a taco building station
1. Set up a taco building station–a bowl of the salsa rojo, a bowl of chopped cilantro (the other half bunch) and onion, a platter of the beef tongue, lime wedges, and warmed up flour or corn tortillas.
2. Build tacos and enjoy.
