Lazy Birria
- 1 salt and pepper, to taste
- 1 lb lamb shoulder
- 3 onions
- 4 c beef stock
- 0.5 c harissa paste
Pickled Jalapeños
- 1.5 c white distilled vinegar
- 0.5 c water
- 4 tbsp sugar
- 4 tsp sea salt
- 2 jalapeños

Lazy Birria
1. Begin prep: season lamb liberally with salt and pepper, thinly slice onions.
2. Sear lamb over high heat on both sides until golden brown and crusty. Pull from the pan.
3. Turn heat down to med-high. Add onions and cook until slightly colored. Add harissa paste and cook for another 1-2 minutes.
4. Pour in beef stock and stir to incorporate.
5. Bring braising liquid to a boil and add lamb back to the mix.
6. Braise lamb for 2-3 hours, either over a stove on low heat or in a 325ºF oven (preferred).
7. Once the lamb is done braising, pull lamb out, shred, then add back to the glazing liquid.
Pickled Jalapeños
1. Slice jalapeño thinly. Add to a container.
2. In a pot, mix vinegar of choice, water, sugar, and salt. Heat over medium until simmering and homogenous.
3. Pour over jalapeños.
4. Let sit until room temperature.
