Ingredients

For the wings
- 3 lbs Chicken wings
- 1 tbsp Kosher salt
- 1 tbsp Black pepper
- 2 tbsp Garlic powder
- 2 tbsp Onion powder
- 1 tbsp Cayenne pepper
- 1 tbsp Smoked paprika
- 1 packet Sazon
- 1 tbsp Italian seasoning
- 1 tbsp Chili powder
For the dry batter
- 2 c All purpose flour
- 1 c Potato starch
- 2 tbsp Baking powder
- 2 tbsp Cornstarch
- 1 tbsp Garlic powder
- 1 tbsp Onion powder
- 1 packet Sazon
For the wet batter
- 1 c All purpose flour
- 1 c seasoned chicken fry
- 2 Club soda, bottle
For the buffalo sauce
- 1 stick salted butter
- 1 bottle buffalo sauce
- 2 tbsp Honey
- 0.25 c sweetened condensed milk
- 0.333 c Heavy cream
- 2 tbsp Kewpie mayo

Directions

Marinating the Chicken
1. Season the chicken and let it marinate for at least 30 minutes.
Preparing the Dry Batter
1. Mix all of your dry batter ingredients and put aside.
Preparing the Oil for Frying
1. In a large shallow pot or a deep fryer, add oil to fill about 2/3 of the way.
Preparing the Wet Batter
1. In a separate bowl, add the wet batter ingredients.
2. Add club soda and stir until a loose batter forms.
Coating and Frying the Wings
1. Dip your wings in the dry batter, then the wet batter, and then the dry batter again.
2. Once your oil reaches 325 degrees, add wings to the oil to fry.
3. Cook them all in batches.
4. Once the batches are finished, crank the heat up to 350 degrees.
5. Add the wings back and cook until golden brown or the wings reach an internal temperature of 165 degrees.
Preparing the Sauce
1. While that rests, prepare your sauce.
2. In a saucepan, add the butter.
3. Once the butter melts, add your buffalo sauce and mix.
4. Add condensed milk and stir in until it dissolves.
5. Add heavy cream and kewpie mayo to thicken.
6. Once smooth, remove from the heat and add your honey.
Serving the Wings
1. Toss your wings in the sauce, serve, and enjoy!
