Ingredients

For the dough
- 3.5 c all-purpose flour
- 1 tsp Salt
- 1 tsp Turmeric powder
- 2 tbsp Curry powder
- 1 c Unsalted butter, cold, cut into small cubes
- 0.5 c ice-cold water
For the filling
- 1 lb Ground beef
- 1 Onion, finely chopped
- 2 cloves Garlic, minced
- 1 tsp Thyme leaves
- 1 tbsp Jerk Seasoning
- 1 tsp Ginger, grated
- 1 scotch bonnet
- 2 stalks Scallions, diced
- 2 tsp Oyster sauce
- 1 tsp Browning
- 0.5 c Bread crumbs
- 2 tbsp Vegetable oil

Directions

Instructions for Dough Preparation
1. In a large mixing bowl, combine the flour, salt, sugar, turmeric powder, and curry powder.
2. Add the cold butter cubes and use your fingers or a pastry cutter to cut the butter into the flour.
3. Add the ice-cold water, a little at a time, and mix until the dough comes together. Don't over knead the dough or the crust won't be flaky.
4. Form it into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Instructions for Filling Preparation
1. While the dough is chilling, heat the vegetable oil in a skillet over medium heat.
2. Add the ground beef to the skillet and cook, breaking it up with a spatula, until browned and cooked through.
3. Add the chopped onion and minced garlic, and cook until softened and fragrant.
4. Stir in the thyme leaves, scotch bonnet, and scallions.
5. Stir in breadcrumbs. This will soak up most of the liquid. Remove from heat and let the filling cool.
Instructions for Patty Assembly and Baking
1. Preheat your oven to 350°F (190°C).
2. Remove the dough from the refrigerator and roll it out on a lightly floured surface to about 1/4-1/8-inch thickness.
3. Use a round cutter or a glass to cut out circles of dough, approximately 4-5 inches in diameter.
4. Place about 2 tablespoons of the cooled filling onto one half of each dough circle, leaving a border around the edges.
5. Fold the other half of the dough over the filling to create a half-moon shape.
6. Use a fork to seal the edges by pressing them together.
7. Place the patties on a baking sheet lined with parchment paper.
8. Bake in the preheated oven for about 25-30 minutes, or until golden brown.
9. Remove from the oven and let the patties cool for a few minutes before serving.
