- 2 c long grain rice
- 2 tbsp Oil
- Green bell pepper, chopped, a couple pieces
- Onion, chopped, a couple pieces
- 1.5 tsp Salt
- 3.75 c Hot water

Directions

Rinsing and Draining the Rice
1. Rinse the rice in a fine mesh strainer until the water runs clear.
2. Set aside and allow to fully drain.
Preparing the Rice
1. Set a medium saucepan (with a tight-fitting lid) over medium-high heat.
2. Once hot, add the oil, bell pepper, and onion.
3. Fry for 1 to 2 minutes.
4. Then add rice and fry, stirring often, until slightly toasty.
5. Stir in salt.
Adding Water and Cooking the Rice
1. Pour in boiling hot water and stir once more.
2. Cook until the water has just about evaporated completely.
3. Stir once more, cover tightly and set over very low heat.
4. Cook, without opening, for 20-25 minutes.
Final Steps
1. Fluff with a spoon or fork and discard the bell pepper and onion pieces, if desired.
2. Serve immediately and enjoy!
