Ingredients

Zucchini Bread
- 1.5 cups grated zucchini
- 1.5 cups gluten free 1 to 1 flour
- 0.5 teaspoon sea salt
- 1 teaspoon Baking soda
- 0.5 teaspoon Cinnamon
- 0.667 cup Coconut sugar
- 0.5 cup melted coconut oil
- 2 Eggs
- 1 teaspoon Vanilla extract
- 1 cup mini dark chocolate chips

Directions

Preparation
1. First, preheat your oven to 350 degrees Fahrenheit.
2. Line a bread loaf pan with parchment paper.
3. Grate the unpeeled zucchini. Once grated, squeeze out the excess moisture with paper towels.
4. Then, measure out the 1 ½ cups. Set aside.
Mixing the Ingredients
1. In a large mixing bowl, combine the gluten free flour, sea salt, baking soda, cinnamon, and coconut sugar. Stir to combine.
2. Then, add in the grated zucchini, melted coconut oil, eggs, and vanilla. Stir to combine.
3. Fold in the chocolate chips.
Baking
1. Transfer the batter to the lined bread pan. Smooth out the top with a spatula. Dot with a few chocolate chips on top.
2. Bake for 40 to 50 minutes, until a toothpick inserted comes out clean.
Final Step
1. Finally, remove the healthy zucchini bread from the oven.
2. Fully cool before slicing into.
