Ingredients

Falafel (approx. 20 balls)
- 4 c Chickpeas, boiled
- 1 bunch Parsley, finely chopped
- 1 Lemon, juiced
- 1 tsp psyllium husk powder
- 1 tsp Cumin
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 3 tbsp Olive oil
Salad
- 4 c baby spinach leaves
- 2 Carrots, cut into ribbons with a peeler
- 1 Cucumber, large, cut into ribbons with a peeler
- 2 c Cherry tomatoes, halved
- 0.5 Red onion, thinly sliced
- 1 c Red cabbage, shredded
- 1 c pickles and pickle juice
- 1 c olives
- 0.25 c pomegranate seeds
Dressing
- 2 c plant-based yogurt
- 2 Lemons, juiced
- 3 tbsp Extra virgin olive oil
- 0.5 c Parsley, finely chopped
- 0.5 c Dill, finely chopped
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste

Directions

For the falafel
1. Combine the chickpeas, 2 tablespoons olive oil, lemon juice, parsley, and spices in a food processor, but don't overprocess as you still want a chunky texture.
2. Add psyllium husk powder, mix well, and let sit for 10 minutes before forming little balls.
3. Bake them for 20 minutes at 350 degrees F.
4. Let them cool to firm up.
For the herbed yogurt dressing
1. Simply mix all the ingredients well.
For the salad assembly
1. Assemble the salad, add the falafel balls, and drizzle with pickle juice and the yogurt dressing.
